Smell receptors are located in a small patch of mucous membrane in the lining of the roof of the nose. These are linked to the brain through the olfactory nerve. The mechanism of smell is probably based on the physical "fit" between odour molecules and the smell receptors. Different receptor types detect different odours. Odour molecules inhaled through the nose have to dissolve in the mucus before they can stimulate the receptors.
